Kimchi

South Korea's national meal, kimchi, is a hot pickled vegetable dish. Garlic, ginger, chili peppers, fish sauce, and cabbage, scallions, or radishes are typically added to a brine along with other ingredients to make kimchi, which is then allowed to ferment. In South Korea, kimchi has a long history that dates back more than 2000 years.
